This blondie recipe uses banana flour for a Pacific twist.  Our banana flour was made by Edward Pono Jones of Hooulu Aina, by slicing peeled green banana and then baking at 150° for 15 hours.  The resulting, completely dried chunks were then powdered into flour with a high powered blender.  Thanks for giving us such a fun ingredient to work with, Pono!

Ingredients

  • 1 1/2 cups coconut sugar
  • 1/2 cup butter, soft
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cups all-purpose flour
  • 1 cup banana flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chocolate chips

Directions

  1. In a large bowl, combine the coconut sugar, butter, eggs and vanilla just until blended. Combine the flour, baking powder and salt; add to sugar mixture. Stir in chocolate chips.
  2. Spread into a greased baking pan. Bake at 350° for 18-20 minutes or until a toothpick inserted near the center comes out clean.
